Lemon Pie Ice Cream Using Gelato Damare Pro Gelato Ice Cream Base Mix


Ingredients

  • Gelato
  • 215g Gelato Damare Pro Gelato Ice Cream Base Mix
  • 574g Whole Milk
  • 210g Fresh Cream with 35% fat (M.G. on the label)
  • Special Ingredients Bakewell Flavour Drops
  • Grated Lemon
  • 2g Turmeric
  • Italian Meringue
  • 60g Egg White
  • 120g Sugar
  • 25g Water
  • 100g Broken Chocolate Chip Cookies

Steps

  • Step 1

  • Ice Cream
  • Step 1

    Blend together 200g of Milk and Gelato Damare Ice Cream Pro Mix.

  • Step 2

    Put the mix in a small saucepan on the stove and bring it gently up to a temperature of 80 ° C stirring continuously throughout with a whisk.

  • Step 3

    Continue to simmer for 5 minutes.

  • Step 4

    Remove the mixture from the heat.

  • Step 5

    Add the remaining 374g of milk and 210g of fresh cream to the previous mix.

  • Step 6

    Add the 5 drops of Flavor Drops aroma Bencotto.

  • Step 7

    Add the rind of a grated lemon.

  • Step 8

    Add the Tumeric.

  • Step 9

    Blend together for 2 minutes.

  • Step 10

    Put the mixture in a sealed container and refrigerate for 24 hours.

  • Step 11

    Put the Mix in the Ice Cream Maker.

  • Step 12

    When you extract it add the Italian meringue.

    Beat the egg white in the Planetary mixer.

  • Step 2

    Mix water and sugar and heat up to 121° C.

  • Step 3

    Pour the syrup into the planetary mixer.

  • Step 4

    Continue to beat until cold.

  • Step 5

    Add the ice cream on top.

  • Step 6

    Burn with a torch.

  • Step 7

    Add the chopped Cookies.

  • Step 8

    Your Gelato Damare Lemon Pie Ice Cream is ready to serve.
